Zucchini Crabmeat Casserole

I found this recipe in the last issue of Virginia Wildlife Magazine. It's very good and the leftovers heat up well.

12 oz blue crabmeat (I used 1 lb)
4 cups zucchini sliced 1/4 inch thick
1 1/2 cups biscuit baking mix (Bisquick)
1 1/2 cups shredded Cheddar cheese
2 teaspoons instant minced onion
1/2 cup vegetable oil
3 eggs
1 teaspoon oregano
salt & pepper to taste

Preheat oven to 400 degrees F.
Mix all ingredients together and spread in a 12 x 7 1/4 x 2 inch greased baking dish.
Bake uncovered until golden brown and a knife inserted in the center comes out clean, 25 to 30 minutes.
Serves 6
